Coconut + Chocolate Granola

I’m always trying to find new ways to introduce new recipes into my seemingly hectic life. Let’s be real: majority of me wants to run down the block and grab an acai bowl every morning but my budget can’t support that (damn that budget). One day I spotted a granola recipe online and thought how easy it seemed to combine a mish-mosh of random ingredients into something delicious. I was right.

This granola is one of my go-to’s for a quick breakfast before I rush out the door. I usually mix it with some almond milk and it’s surprisingly super tasty! The crunch of the oats pairs perfectly with the sweetness of the dark chocolate and coconut flakes. Bonus part is that it’s super inexpensive and makes a fairly large batch when it’s all mixed together. I tend to store mine in an oversized mason jar and pour some out as needed.

All you need is five easy ingredients: granola, coconut flakes, mini dark chocolate chips, dried cranberries, and sliced almonds. I picked up all of these from my local Trader Joes but you should be able to find them at your local supermarket as well.

The best part is that you can mix-and-match this recipe with anything that appeals to your taste buds. I’m looking to make a brown sugar and cinnamon version this weekend: layered between yogurt and apples, a la Pret a Manger. Yum.
